At peak tomato season, I want nothing but fresh or roasted tomato toast. Tomatoes are taking over my garden (and the farmer’s market), so I’m always looking for new ways to put them to good use.
In this recipe, sweet tomatoes are drizzled with garlicky olive oil, roasted until tender, then layered with tangy goat cheese and fresh herbs on crusty, toasted bread. Finished off with a drizzled of balsamic glaze!
Serve these roasted tomato toasts (also known as tomato tartines) as a light lunch or as a side dish for an Italian-inspired meal. I love it with a side of Mediterranean Cucumber Salad.


My best recipe tips
- This tomato toast recipe is, of course, ALL about the tomatoes. The sweeter the tomatoes, the better the flavor! If you have a farmer’s market – or even your own garden – visit it at peak tomato season.
- The bread is almost as important as the tomatoes. Find a good crusty loaf with soft insides. Then toast with olive oil to add to the flavor and texture.
- Save time by using store-bought balsamic glaze. It’s available in the condiment section of many grocery stores.


How to make roasted tomato toast
- Prep the tomatoes: Arrange the sliced tomatoes on a baking sheet lined with parchment paper. Drizzle the tomatoes with olive oil and seasonings.
- Roast the tomatoes: Roast the tomatoes for 10 minutes, then top with chopped garlic. Roast for another 5 to 10 minutes.
- Toast the bread: I like to brush the bread with olive oil, then toast in a skillet. This produces some nice charred spots. However, they can also be toasted in the oven at 350 degrees F.
- Assemble the toasts: Top each piece of toast with a layer of goat cheese, a few slices of roasted tomatoes, balsamic glaze and sliced basil. Sprinkle a little more salt on top, if desired. Serve!
Storage
These toasts are best when served right after being assembled. However, the roasted tomatoes can be made ahead of time. Once the tomatoes cool, transfer them to an airtight container and refrigerate for up to 3 days.

Ingredients
- 5 medium tomatoes cut into ¼-inch slices (See Note 1 below on tomato size.)
- 1 ½ tablespoons olive oil
- ½ teaspoons kosher salt
- ¼ teaspoon ground pepper
- 3 large garlic cloves minced
- 6 slices Italian rustic loaf See Note 2
- 3 sprays olive oil
- 2 ounces goat cheese (chevre) room temperature for spreading
- 1 teaspoon balsamic glaze store-bought or homemade (optional)
- 6 basil leaves thinly sliced
- Kosher salt or sea salt for sprinkling (optional)

Instructions
Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper.
Arrange the tomato slices in a single layer on the parchment paper. In a small bowl, stir together the olive oil, oregano, salt and pepper. Drizzle the olive oil mixture over the tomato slices.
Roast the tomato for 10 minutes. Sprinkle the minced garlic over the tomatoes. Roast the tomato for an additional 5 to 10 minutes, or until the tomatoes are tender.
- Heat a medium skillet over medium heat. Lightly coat both sides of the bread with olive oil spray, then toast in the skillet, flipping partway through. This produces some nice charred spots. This may need to be done in two batches.Alternatively, lightly coat both sides of the bread in olive oil spray, then toast in an oven set to 350 degrees F.
Top each piece of toast with a layer of goat cheese, a few slices of roasted tomatoes, balsamic glaze (if using) and sliced basil. Sprinkle a little more salt on top, if desired. Serve!
Notes
Note 2: I typically use a crusty Italian bread in the specialty bread section at my local grocery store. Look for a loaf that produces smaller slices (i.e., not a large boule), unless you want larger toasts. If using larger slices, plan on using additional goat cheese and tomatoes.

The assembled toasts are best served right away. However, you can roast the tomatoes ahead of time and store in an airtight container for up to 3 days. If you prefer them warm for the toasts, place a few slices of roasted tomatoes in a skillet and gently warm over medium-low hear.
While the balsamic glaze adds a lovely sweet and tangy layer of flavor, it is optional.
