My Approach to Meal Planning

Every time I fall out of the meal planning habit , I find myself relying on too much takeout, restaurant food, and unhealthy snacks. It’s shocking how quickly the pounds creep back—and how lousy I feel.

When I have even a rough idea of what I’m cooking for dinner in the coming week, I’m far less tempted by fast food or takeout. But my approach to meal planning is intentionally simple. Trying to do too much overwhelms me, so I keep it SUPER EASY: just a post-it note on the counter with a few dinners I plan to make. That’s it.

Since it’s just the two of us—myself and my husband—we often have leftovers. This means plenty of ready-made lunches or dinners for the next day. I enjoy finding creative ways to repurpose leftovers into something fresh and tasty.

Our social life is fairly active, and plans can change on a dime. That’s why flexibility is key for me. (You can read more about my approach to realistic meal planning for unpredictable schedules.)

Ultimately, I am always asking myself, “How can I make this as easy as possible?” For me, meal planning only works when it’s simple. As long as I have a stash of easy-to-prepare, healthy foods in the fridge and pantry, I know I’m setting myself up for success.

What Do I Eat for Breakfast on Weight Watchers?

Most days my breakfast is something quick like an english muffin with almond butter, avocado toast, cottage cheese with fruit, eggs, yogurt with fruit, oatmeal or a smoothie, depending on my mood and the season.

What Do I Eat for Lunch on Weight Watchers?

Lunch is usually leftovers or some combination of soup / sandwich / salad. This formula is a proven winner for me. I never fall into the temptation of takeout when I have a jar of soup, bowl of hard boiled eggs, container or leftovers and/or salad fixings staring back at me when I open the fridge!

This Week’s WW Dinner Suggestions with Points

Hearty Slow Cooker Beef Vegetable Soup
This slow cooker vegetable beef soup is brimming with good-for-you ingredients like carrots, celery, onions, potatoes, turnips, and peas. To keep it light, I use top round steak, trimmed and cubed, but any extra lean stew beef works just as well. I’ll plan to serve this delicious hearty satisfying soup with a little crusty French bread.

Slow Cooker Salmon and Asian Vegetables for Two
I love that this is a recipe that only serves two (affiliate link) and can be made in a 1.5- to 3-Quart slow cooker (affiliate link). It can also be easily doubled and cooked in a 3- to 4-Quart slow cooker (affiliate link).

It comes together in minutes—just dump in a bag of frozen vegetables, place your salmon on top, season with salt and pepper and pour in a simple sauce, cover and cook. And it takes only 2-3 hours on LOW, which works well for me because I work mostly from home. I’ll serve it with a small portion of steamed brown rice. If you are keeping things low carb, cauliflower rice would work.

Mushroom Chicken Stir-fry for Two
If you are a fan of the Mushroom Chicken from Panda Express, I think you will love this copycat version. A delicious one-pan meal, this chicken and mushroom stir fry comes together in less than 30 minutes. Quicker than you can grab takeout from your favorite Chinese restaurant.

Greek Frittata
As soon as I saw this recipe for a Greek Frittata with Spinach and Feta I knew I had to make it. The combination of flavors is a winner! If you have never had a frittata before, it is just an open-faced omelet. I will serve it with a simple mixed green salad.

Ideas for Using Leftover Frittata:

  • Breakfast Sandwich: Slice the frittata and tuck it into a toasted whole wheat English muffin or pita.
  • Breakfast Wrap: Wrap it in a whole wheat tortilla with diced tomatoes, olives, and a drizzle of yogurt sauce.
  • Greek-Inspired Salad Topper: Cut into cubes and toss over a Greek salad with cucumbers, cherry tomatoes, olives, and red onion.
  • Stuffed Pita or Wrap: Chop it up and stuff it into a warm pita with mixed greens, roasted red peppers, and a dollop of tzatziki.
  • Mediterranean Mezze Platter: Serve slices alongside hummus, olives, and whole-grain crackers for a protein-packed snack.

Easy 3-Ingredient Banana Bread
I am also planning to whip up a batch of this incredibly easy banana bread, made with just yellow cake mix, ripe bananas, and eggs. Naturally sweet (affiliate link) and wonderfully moist, it bakes up light yet satisfying, with a soft, tender crumb. Low in fat but full of flavor, it is the perfect treat to enjoy any time of day—paired with yogurt for a sweet breakfast, savored alongside a cup of tea in the afternoon, or served as a simple, comforting dessert to share with family and friends.
