Recipe Ingredients
- Mini pretzels – These form the crispy, salty base (and top) of each cookie bite, creating a perfect contrast to the sweet caramel and chocolate.
- Rolo chocolate caramel candies – Rolos are bite-sized chocolates filled with soft caramel—essentially the gooey, melty center of this treat.
- Melted chocolate for drizzling, if desired – A little drizzle of melted chocolate adds extra richness and a polished look.
Why You’ll Love These Rolo Pretzel Cookies
- Perfectly Portioned: Each cookie is a satisfying little bite—just enough to crush a craving without going overboard. They’re ideal for mindful indulgence.
- Make as Few or as Many as You Need: Whether you’re whipping up a small batch for movie night or making dozens for a holiday platter, this recipe scales effortlessly. No measuring cups needed—just line up your pretzels and go!
- Flexible and Fuss-Free: Don’t have Rolos? Swap in what you’ve got. Want to skip the drizzle? Totally optional. These are the kind of treats that fit your life, not the other way around.

How to Make Rolo Pretzel Sandwich Cookies
Step 1: Gather and prepare all ingredients. Preheat oven, or toaster, oven to 350F degrees.

Step 2: Place 10 mini pretzels on a small cookie sheet. Top each pretzel with a Rolo candy.
Step 3: Bake for 3-5 minutes, or until Rolo candies turn shiny and slightly melty, but are still holding their shape.

Step 4: Remove from oven and top each one by press remaining pretzels into the melting Rolo’s, creating the cookie tops. If not drizzling optional chocolate, place in freezer for a few minutes to allow cookies to firm up.

Step 5: If using the extra chocolate drizzle, add 1-2 tablespoons chocolate chips into a microwave-safe bowl. Gently heat in microwave in 30-second increments, stirring chocolate in between, just until chocolate is melted. (Be careful to not scorch the chocolate by cooking it too long – it will quickly become unusable.) Drizzle using a spoon or add chocolate to a small plastic baggy, snipping off one corner and then drizzling over each cookie. Place cookies in freezer for a few minutes to allow them to set.

Recipe Notes
These simple 2-bite Roll pretzel cookies can be enjoyed as is, or made to be a little more decorative by drizzling a little melted chocolate over each pretzel sandwich cookie. Place cookies that have been drizzled with chocolate in the freezer for a few minutes to give the chocolate time to set.

Serving Suggestions
Enjoy these simple pretzel sandwich cookies by themselves or with a small scoop of vanilla ice cream or low fat frozen yogurt.
